Upgrading from Debian 10 (Buster) to Debian 11 (Bullseye) - A Walkthrough

We will be doing a walkthru of a live upgrade of Debian 10->12 showing how we planned it. We'd like to get to release 12 (the latest) but 'do we need to stop at 11 for intermediate things'?
We have mailman e-mail listserve and a webserver and various other sftwr. Do these sftwr pkges have DEPENDENCIES on which release of the OS? How can we tell? In what order do we proceed?
It is a 'multi-user system' with expectations that it is to be 'up and available' 24x7, so, we have to treat this more like a 'business machine' rather than a 'home-user/hobbiest'. So, this will be a good chance to see how to PLAN such an upgrade rather than just 'brute force it'
